Ingredients
  

  • 6 cups vegetable broth or water
  • 1 large carrot, thinly sliced
  • 1 stalk celery, thinly sliced
  • 1 small onion, finely chopped
  • 1 cup mushrooms, sliced (shiitake, button, or cremini)
  • 1/2 cup green beans, chopped
  • 1 cup shredded cabbage
  • 2 cloves garlic, minced
  • 1-inch piece ginger, sliced
  • 1 tbsp soy sauce or tamari (gluten-free option)
  • Salt and pepper to taste
  • 1 tbsp olive oil or sesame oil
  • Fresh herbs for garnish (parsley, cilantro, or chives)

Instructions
 

  • Preparation:Wash and slice all vegetables uniformly.
  • Sauté the Aromatics:In a large pot, heat the oil over medium heat. Add onions, garlic, and ginger. Sauté for 2-3 minutes until the onions are translucent and fragrant.
  • Add the Vegetables:Add carrots, celery, mushrooms, green beans, and cabbage. Stir and sauté for 3-4 minutes.
  • Pour in the Broth:Add vegetable broth or water. Increase heat to high and bring to a boil, then reduce to low and simmer for 20-25 minutes.
  • Season the Soup:Add soy sauce, salt, and pepper. Taste and adjust seasoning as needed.
  • Finishing Touches:When vegetables are tender, remove from heat. Ladle into bowls and garnish with fresh herbs.
  • Serve and Enjoy:Serve hot with bread, rice, or a light salad.
