Mamaw's Chicken and Rice Casserole

Ingredients
  

  • 2 cups cooked rice (white or brown)
  • 2 cups cooked, shredded chicken (rotisserie or boiled)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth (low-sodium recommended)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup frozen peas and carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Combine Ingredients: In a mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, 3/4 cup of cheese, frozen peas and carrots, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly coated.
  • Transfer to Casserole Dish: Pour the mixture into a greased casserole dish, spreading it evenly.
  • Top with Cheese: Sprinkle the remaining 1/4 cup of cheese on top.
  • Cover and Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  • Uncover and Brown: After 30 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.
  • Serve: Let the casserole rest for a few minutes before serving. Enjoy!

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
