Equipment

  • Baking Sheet
  • Wire Rack
  • Large Mixing Bowl
  • Blender
  • Saucepan

Ingredients

For the Wings:

  • 2 lbs chicken wings - split into drumettes and flats
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For the Mango Habanero Sauce:

  • 1 ripe mango - peeled and diced
  • 2-3 habanero peppers - deseeded optional
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1/2 cup unsalted butter
  • 1 teaspoon apple cider vinegar

Instructions

  • Preheat the oven to 400°F (200°C). Prepare a baking sheet with parchment paper or a wire rack.
  • Pat dry the chicken wings and toss them with baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper in a mixing bowl.
  • Arrange wings on the baking sheet and bake for 40-45 minutes, flipping halfway through.
  • Blend mango, habanero peppers, honey, lime juice, soy sauce, and vinegar into a smooth sauce.
  • Heat butter in a saucepan, add the blended mixture, and simmer for 5-7 minutes until slightly thickened.
  • Toss the baked wings in the sauce and serve hot.

Notes

  • For milder wings, reduce the number of habanero peppers or substitute with jalapeños.
  • These wings are versatile and can be cooked in an air fryer or grilled for added smokiness.
