For the Wings:
- 2 lbs chicken wings - split into drumettes and flats
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
For the Mango Habanero Sauce:
- 1 ripe mango - peeled and diced
- 2-3 habanero peppers - deseeded optional
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1/2 cup unsalted butter
- 1 teaspoon apple cider vinegar
Preheat the oven to 400°F (200°C). Prepare a baking sheet with parchment paper or a wire rack.
Pat dry the chicken wings and toss them with baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper in a mixing bowl.
Arrange wings on the baking sheet and bake for 40-45 minutes, flipping halfway through.
Blend mango, habanero peppers, honey, lime juice, soy sauce, and vinegar into a smooth sauce.
Heat butter in a saucepan, add the blended mixture, and simmer for 5-7 minutes until slightly thickened.
Toss the baked wings in the sauce and serve hot.
- For milder wings, reduce the number of habanero peppers or substitute with jalapeños.
