Ingredients
  

  • 1 tbsp olive oil for sautéing
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1- inch piece of ginger minced
  • 1 large carrot chopped
  • 1 red bell pepper chopped
  • 1 cup sweet potatoes peeled and chopped
  • 4 cups vegetable broth low-sodium recommended
  • 1/2 cup creamy peanut butter unsweetened
  • 1 can 14 oz diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper optional
  • Salt and pepper to taste
  • Fresh cilantro and crushed peanuts for garnish

Instructions
 

Cook the Aromatics

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes, until soft. Stir in minced garlic and ginger, cooking for an additional minute until fragrant.

Add the Vegetables

  • Add carrots, bell pepper, and sweet potatoes to the pot. Stir well to coat the veggies with the aromatic mixture. Cook for about 5 minutes, allowing the veggies to soften slightly.

Simmer the Soup

  • Pour in the vegetable broth and diced tomatoes (with juice). Stir to combine, bring the mixture to a boil, then reduce the heat and simmer for 15–20 minutes, until the vegetables are tender.

Blend the Soup

  • Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender. Be cautious with hot liquids!

Incorporate Peanut Butter and Spices

  • Stir in peanut butter, cumin, smoked paprika, and cayenne pepper (if using). Blend again if needed to ensure the peanut butter is fully incorporated. Season with salt and pepper to taste.

Adjust Consistency

  • If the soup is too thick, add a little more broth. Simmer for a few minutes to adjust the texture as desired.
